Starter:
Caldo Verde (Portuguese Green Soup)
Caldo Verde is one of Portugal’s most beloved soups — simple, comforting, and full of rustic flavor.

Ingredients

¼ cup olive oil

10 oz chouriço, sliced into ¼-inch (6 mm) coins

2 large white onions, diced
-
Salt, to taste

2 cloves garlic, sliced
-
6 medium red potatoes, peeled and roughly chopped

8 cups chicken stock
-
1 lb green cabbage, finely shredded

Ground black pepper, to taste

Directions

In a large pot, warm the olive oil over medium heat. Add the chouriço and cook until lightly browned on both sides (3–5 minutes). Remove with a slotted spoon and set aside.

In the same pot, sauté the onions with a pinch of salt until translucent. Add the garlic and cook 2 minutes more.

Add the potatoes and stock. Bring to a boil, then simmer until the potatoes are tender.

Remove from heat, cool slightly, and purée until smooth.

Return the soup to the pot, add the shredded kale or cabbage, and simmer until tender (2–5 minutes).

Season with salt and pepper, stir in the cooked chouriço, and serve hot with a drizzle of olive oil.
