Caldo Verde (Portuguese Green Soup)

Caldo Verde is one of Portugal’s most beloved soups — simple, comforting, and full of rustic flavor.

Ingredients

  • ¼ cup olive oil

  • 10 oz chouriço, sliced into ¼-inch (6 mm) coins

  • 2 large white onions, diced

  • Salt, to taste

  • 2 cloves garlic, sliced

  • 6 medium red potatoes, peeled and roughly chopped

  • 8 cups chicken stock

  • 1 lb green cabbage, finely shredded

  • Ground black pepper, to taste

Directions

  • In a large pot, warm the olive oil over medium heat. Add the chouriço and cook until lightly browned on both sides (3–5 minutes). Remove with a slotted spoon and set aside.

  • In the same pot, sauté the onions with a pinch of salt until translucent. Add the garlic and cook 2 minutes more.

  • Add the potatoes and stock. Bring to a boil, then simmer until the potatoes are tender.

  • Remove from heat, cool slightly, and purée until smooth.

  • Return the soup to the pot, add the shredded kale or cabbage, and simmer until tender (2–5 minutes).

  • Season with salt and pepper, stir in the cooked chouriço, and serve hot with a drizzle of olive oil.
